Welcome to My Baking Blog! (+ A Cozy Recipe to Celebrate National Apple Pie Day)
Hey friend,
I’m so happy you’re here — seriously, it means the world to me!
If you’re new around here, I’m Nicci. I’ve been baking for as long as I can remember, and what started as a love for decorating beautiful custom cookies (the kind that almost feel too pretty to eat… almost) has evolved into something even bigger. Over the years, I found myself drawn to the joy of recipe creation — from nostalgic classics to creative twists on comfort favorites — and now I’m bringing it all into the digital space to share with you.
While I still take the occasional custom cookie order (because I’ll always love it), my business has shifted. These days, I’m focusing more on digital products, downloadable recipes, and the occasional pop-up shop — a rhythm that feels just right for this season of life. It gives me the freedom to create, connect, and inspire fellow bakers like you in a deeper way.
And to kick things off, I’m starting this blog with… not a cookie. 😅
I know, I know — bold move for someone known for cookies! But it’s National Apple Pie Day, and these Apple Crisp Bars are just too good not to share.
They’re everything you love about a classic apple pie — warm cinnamon apples, golden crumble, cozy vibes — but way easier to make (and share). Whether you’re craving something fall-ish, baking for a crowd, or just want your kitchen to smell amazing, this recipe is for you.
Why You’ll Love These Bars
- Simple ingredients you probably already have on hand
- No rolling pins or pie dough required
- Buttery brown sugar crust
- Easy to cut, store, and transport
- Great for making ahead!
Quick Tip
Use tart apples like Granny Smith or Honeycrisp for the best flavor balance. And if you want to level it up, add a drizzle of caramel or a scoop of vanilla ice cream on top. You’re welcome. 😉

Thanks so much for being here. I’m truly excited to grow this space and share more of what I love with you. Here’s to the beginning of something delicious — cookie recipes coming soon(ish). 😉
Happy baking, Nicci
